I have a number of gig requests at the moment that aren't at the stage where dates are being discussed, but that I'd still like to be able to track through BH.
Is there a way of using the schedule function to create a gig opportunity but without a date? That could then hopefully turn into an actual scheduled gig when the negotiations have concluded.

No, you can't add an event without a date. You could just pick an upcoming date like Jan. 1 and write something like "actual date TBD" in the Notes field.
Another option is not to add an event at all, but add the contact and then add an action for the contact with a name like "follow up on dates." You can set the action's date a week or two into the future or however long you expect to spend discussing the event. Then that action will appear in the menu shortcuts as a reminder, or you can set it to send you a reminder.
