Also, how does one sort the actual list of "set lists"?

That is included in the predefined Practice layout, or you can add it to any layout:

Set lists that aren't attached to an event appear above the divider line sorted by name, and set lists that are attached to an event appear below the divider line sorted newest to oldest. You can't change from that sorting method.
Set List "sorting" (Android > Galaxy Tab S2) . . .
As far as I know, my list of "Sets" are not attached to any Event . . .
So - tapping "Repertoire" leads to:
Songs
Set Lists
Smart Lists
et cetera . . .
Tapping "Set Lists" presents me with the following:
Molten Three
Molten Two
Molten Four
Molten One
Up Next
Showcase 1
Reserve
Temp One
Temp Two
Showcase 2
Are you asking why aren't the set lists sorted alphabetically? I would need you to submit a help ticket to answer that:
